Almond Scones Recipe

Almond scones…

Almond scones…

We make several flavors of scones at the LUV Ice Cream Cafe, but the almond scone is my absolute favorite. So many foods bring back nostalgic memories for me. The flavor of these delightful scones remind me of the almond cookies we would get after a meal at Soo’s Chinese Restaurant in Southwick, MA. One a month my family would take a little 40 minute trip from our home in Winsted, CT to Southwick, MA and I couldn’t wait to taste the amonld cookies!

All the memories…all the great flavor…none of the guilt with these almond scones! I hope you LUV them!

Dry ingredients:

  • 2 cups fine almond flour

  • 1/3 cup Sweet LUV™

  • 1 tsp baking powder

  • 1/2 tsp fine salt

  • 1/4 tsp baking soda

  • 6 Tbls cold butter cut into small chunks

With a pastry cutter or your fingers cut butter into mixed dry ingredients. Be careful not to over blend or the scones will spread too thin in the oven.

Wet ingredients:

  • 1/4 cup heavy cream

  • 1 egg beaten

  • 1/2 tsp almond extract (make sure it’s GF)

Blend wet ingredients into dry. Divide batter into 8 tight round balls and top with

  • sliced almonds

Refrigerate the dough for at least 30 minutes. Bake at 400º F for approximately 15.

Cool and enjoy!
